So the days are getting shorter, the unreal sunsets, and crisp, clear mornings. This is Autumn – arguably one of the best season’s we think of the year. Settled weather and fine, sunny days without that humidity. Perfect.
And with it, the pinot gris are just not going down as well anymore. Something with a little more kick and warmth just to take the chill off is definitely what’s required.
Here at The Pool Terrace & Bar, we have some uncovered 5 of the BEST Autumn cocktails. OK – so you can make these yourself, but why not put the shaker away and head up to the level 4 … to our little sanctuary above the CBD and enjoy the finest cocktails #autumnstyles.
1 1/2 cups cranberry juice
3/4 cup fresh lime juice
3/4 cup tequila
1/2 cup orange-flavoured liqueur, such as Cointreau or Triple Sec
Stir all ingredients together until blended. Serve over ice in sugar- or salt-rimmed glasses, garnished with fresh cranberries and lime wedges if desired.
Apple Pie Moonshine
2 oz bourbon
4 oz apple juice
1 oz fresh squeezed lemon juice
apple slices, to garnish
cinnamon sticks, to garnish
In a cocktail shaker, combine bourbon, apple juice, cinnamon simple syrup, and lemon juice. Fill shaker 2/3 full of ice. Stir for 10-15 seconds to chill drink. Strain ice. Serve cocktail with new ice. Garnish with sliced apples and cinnamon sticks.

The distinct flavour of amaretto enhances the smooth pleasure of a scotch on the rocks without disturbing the original scotch flavour too much. Try this one during happy hour after a tough day at the office.
One of those perfect drinks to bridge together Summer and Autumn.
2 oz Whiskey (Apple flavoured if you can get your hands on some)
1/2 oz Vermouth
2 dashes Angostura Bitters
Maraschino cherry for garnish
Apple slices for garnish
How to Make It
Pour the ingredients into a mixing glass filled with ice.
Strain into a chilled cocktail glass.
Garnish with a fan of apple slices and a maraschino cherry.
